In 1972, in the midst of this fervor, John Yudkin, professor of nutrition at the University of London, published Pure White and Deadly.

This book, which came from a recognized authority, created a scandal. It directly contradicted Keys’ position. The sugar industry got involved, contradicting his carefully developed theory. Yudkin was forced to use every tool he had to stand up to what he saw as a threat to his integrity. He was opposing an industry that until that time had exercised its power without meeting any resistance.

Yudkin was personally attacked and portrayed as a fanatic; his ideas were dismissed as “emotional assertions.” As a result of the media lynching, he was discredited and marginalized by the scientific community. He found himself unable to publish. As all this was transpiring, the sugar industry was funding studies to show that sugars are benign, bolstering their claim with relentless advertising and the creation of ever more addictive and seductive products.

When Yudkin died, he was defeated and forgotten.
